Over the last few weeks, Raleigh and I have really been trying to eat healthier. I have to say that we have always been pretty good eaters, but we've tried to step it up a notch. In an effort to lower our intake of carbs, (I lOVE pasta) I began searching for ways to make our pasta a little healthier. And we LOVE what we discovered....spaghetti squash!
And the best part is that it is super easy to prepare! You just cut a spaghetti squash in half, take out the seeds, and roast it for about 30 minutes on 375 or 400. Then when you take it out of the oven, you use a fork to pull the strands of squash away from the peel. It looks just like spaghetti noodles!! We have made it twice this week. First we topped the "pasta" with olive oil, garlic, pine nuts and basil! It was so yummy. We made it again today and topped it with homemade pesto.

If you are looking for a way to have "pasta" without all of the carbs, this is a great idea. This recipe is very similar to what we made tonight!

After Beau and I made the pesto, we went outside to play a little during a break in the rain.
